To Gluten or Not to Gluten? This is the answer. Super detailed. A part of the equation is knowing that when we mix simple sugars - sugar/sweeteners with complex sugars - carbs, our digestion goes and processes the easier simple sugars, with the complex sugars taking second place in the queue leaving them to be less well assimilated.
